The Living Lab is an outdoor Herbology class where students become 'plant detectives.' We explore the botanical world through observation, sketching, journaling, and hands-on inquiry — blending science, art, and nature study.

Classes are designed for students in 4th grade and up. The material is hands-on, inquiry-based, and adapted to curious learners who enjoy being outside and asking questions.

Students learn to slow down and notice the botanical world with curiosity: they ask questions, record observations, research what they find, and create something meaningful from each session. Over time they build a beautiful Field Journal, recognize common herbs and useful plants, describe plant parts, observe pollinators and ecosystems, and understand how plants have been used for food, crafts, and comfort across cultures and time. Their Field Journal is a naturalist's tool for careful observation and documentation — inspired by the notebooks botanists, naturalists, and explorers have kept throughout history.

Classes meet outdoors in Fallbrook, California, on Via Encinos Drive. The garden and surrounding natural spaces serve as our living classroom.

Each session is typically 1 hour, allowing plenty of time for observation, journaling, discussion, and hands-on activities.

Students bring a Field Journal, pencils, and colored pencils or watercolor supplies — sketching and watercolor are used as scientific tools for observation and documentation rather than as the focus of the class. A water bottle, sun hat, and small snack are also recommended. To make sure every class has what it needs, watercolor kits and journals can also be stored on site. A detailed supply list is shared after enrollment.

Comfortable clothes that can get a little dirty, closed-toe shoes, and a sun hat. Layers are helpful since the weather can shift during our time outside.

Students observe and handle plants with guidance. Any tasting is strictly optional, carefully supervised, and only happens with plants that are clearly identified as safe and appropriate.

Please share any allergies or sensitivities before class begins. Activities are adapted to keep everyone safe, and students are never required to touch or taste anything they are uncomfortable with.

Parents are welcome to check in and observe. Because the class is designed to build independent observation skills, students are encouraged to participate on their own while parents stay nearby if they prefer.

A little drizzle is part of the outdoor experience, but class is rescheduled or moved to a covered area in case of heavy rain, strong winds, or unsafe conditions.
